Since I got the no grain, no sugar, no dairy diet last fall, almond milk has been a staple in my house. I love my morning smoothies–1 cup almond milk, a frozen banana, a good handful of spinach, and a tsp-Tbl of cocoa. Yum!
Recently, though, I was reading that store bought almond milk has some questionable ingredients. Then I found out how easy it is to make your own…and I finally decided to give it a try.
I soaked a cup of almonds for about 24 hours, drained & rinsed them, then threw them in the Vitamix with 4 cups of Berkey filtered water. The Vitamix did such a good job that I probably could have ended there–especially since I don’t drink almond milk straight.
But I thought it would be cool to make almond meal/flour too! So I dug out the cheesecloth I bought ages ago ‘just in case’ and had Megan help me strain out the milk from the pulp.
Here’s what I ended up with! As you can see, I spread the almond meal out on a cookie sheet covered in waxed paper, then let it dry in the oven at 200 with the door slightly open for a few hours. This morning, I put the dried meal into the food processor…
…and a few minutes later I had almost a cup of almond flour. So cool!
This experiment was definitely worth it! My smoothie tastes amazing this morning!!
