…and I’m not sure what I think. I’ve been trying paleo dessert recipes lately because all four of the other ladies on the women’s ministry team at my church are either gluten free or paleo for health reasons, and I like to bring them treats! 😊
My favorite recipes so far are an avocado mousse and a coconut fudge. I saw this recipe for a chocolate mug cake and thought I’d give it a try.
Most of the comments on the blog post itself are positive, though a few note that their cake tasted a little like chocolate scrambled eggs. (Ew!)
The cake is very easy to make, though it did take twice the time noted to bake (3 minutes for me). I added a sprinkle of mini chocolate chips, which are definitely the best part of this cake. The taste is actually not bad, especially if you are on a paleo diet and just need something chocolatey. However, the texture is a bit eggy. It is tasty enough that I will try it again with oil/applesauce/banana instead of the egg. (I do have to note that all four boys in my house—ages 1-40- all spit this out.)
