. Believe it or not, I somehow convinced hubby to try a 21 day raw food diet. I found several different opinions about what that means, so this is what I came up with. Fruit, veggies, raw dairy, nuts, seeds, and sprouted grains. I am cooking, just trying to eat non-processed foods.
Last night I made vegetable tian for dinner, which was amazing! You just chop and onion and a few cloves of garlic and cook in olive oil. Pour that into the bottom of a square pan. Slice zucchini, squash, tomatoes, and potatoes and line them up in rows. Sprinkle generously with salt & pepper. Bake at 400 for 25 minutes covered. Uncover, sprinkle with shredded cheese & bake 10 more minutes. Amazing and so easy!
For lunch today, we are trying broccoli bites. The recipe calls for a 16 oz package of frozen broccoli, but I just steamed two heads of fresh broccoli and chopped it with my handy dandy Pampered Chef chopper. Drain & mix broccoli with 3 eggs, about a cup of shredded cheddar, and a cup of ground cashews (substitute for bread crumbs).
Shape into patties and bake at 375 for 15 minutes, flip them and bake for another 10. Yum!
