Salads in a Jar!

20130821-163527.jpgI have been making a valiant effort to eat “clean,”. But as a busy mom, sometimes I just don’t have the energy to make the time to be healthy.

I have run across a few pins about preparing salads in advance and keeping them in a jar. By all accounts, if you prepare them right, the salads will last about a week.

So, today I found a few recipes here: http://www.simplebites.net/crunch-crunch-a-week-of-make-ahead-spring-salads-in-jars and decided to give it a go.

I’m really excited about having lunch (or dinner) ready for me!!
