I LOVE peanut butter cookies–especially the ones with the Hershey’s kiss in the center. And the easiest cookies to make are also my favorite. My good friend Jamie shared with me her super simple recipe a few years ago–1 cup of sugar + 1 cup of peanut butter + 1 egg. Bake at 350 for about 10 minutes. Super yummy!
Well, I thought I’d try to make the recipe a little healthier and try using honey instead of sugar. I found a recipe here that uses honey and a few tsp of sugar, which is optional. I have some honey that is pretty solid, so I thought it might work without the extra sugar. This recipe calls for heating up the peanut butter and then chilling it in the fridge. I have never done that before (hello?! extra steps! lol), so I didn’t do it this time, either. Well…the cookies taste AMAZING…but they are basically, well, goopy. They never set. I may try this again with 1/2 cup sugar added. It may be a little too sweet, but maybe they would hold together better.
While the honey didn’t work out the way I wanted it to, the source also included a super great tip for those Hershey’s kisses. I’ve always put them on the cookies before putting in them in the oven. But this time, I just scooped the cookie dough and left it in a ball, then pressed the kisses in right after taking them out of the oven. The kisses got all soft and melty. Perfect!
