You know those days where you really need to go to the grocery store?  Those days when you’re out of bread, but you don’t want to make some?  And you have hungry kids and need a meal that only takes a few minutes to prepare?  Today was one of those days at our house.

So, I took a look in the fridge and noticed that I had some leftovers…some spicy Grillin’ Beans, some organic sweet corn, and some fajita rice.  I thought…hmmm–nachos!  So, I mixed the Grillin’ beans, the corn, and the rice with a big spoon of sour cream and a handful of shredded cheese.  (Can I just say that I LOVE Costco!  I buy the huge packs of shredded cheese and divide it up into smaller portions & freeze it.  Voila!  Cheese any time I need it!)

So, I poured some tortilla chips into my handy dandy Pampered Chef stone bar pan and spread my bean concoction over the top.  Sprinkling more cheese on top finished off my tasty dish.  10 minutes at 350 and I had yummy, bubbly, nachos.

Everyone loved these–even Ryan!  And the best part is (for me) that I cleared out three containers from my fridge.  🙂
