Experimenting with Gluten Free Cupcakes

We were invited over to a friends house for carnitas tonight, and I wanted to bring something. Which I always forget to do. Since I felt like baking today, margarita and piña colada cupcakes sounded like fun.

Of course, I scoured Pinterest for a great recipe and found this one. Unfortunately…most of my friends eat a gluten free diet. One of my friends also cannot have eggs or dairy. So…

I thought I’d experiment with an old trick. Have you ever heard of Coke cake? Basically, you can make any boxed cake mix with a can of soda–the carbonation takes the place of the eggs and butter. Years ago, I tried it with sparkling water, and it works great! This is a great solution for folks with dietary issues–it makes baking much easier!

I found two mixes–a Krusteez yellow cake mix and a Grandpa’s yellow cake mix. Hmmm…add another layer on to the experiment! 😉

I bought a can of sparkling pineapple coconut water and a can of lime La Croix. The lime flavor was not as pronounced as I’d like, so I added in the zest from one lime and about a T of lime juice. To the piña colada mix, I added 2 T of crushed pineapple.

Both cupcakes taste great–my 13 year old couldn’t tell they were gluten free. The lime cupcake needs a bit more lime, but it’s ok. The difference in the mixes is pretty obvious:

The lighter colored cupcakes on the left are the Grandpa’s mix–my lime flavor. The ones on the right are the Krusteez mix. The texture and height of the Krusteez is much better–and they pop right out of the cupcake papers. The lime ones stick to the paper. I’m hoping as they cool more, that will fix the issue. In the future, I will go with the Krustees mix.

For comparison, here are the “regular” cupcakes from the recipe I found–they have all the things!!

The “regular” cupcakes definitely look fluffier…and I think prettier than the others.
