It rained almost all last week, which gave me a great excuse to make one of my all time favorite soups–tortilla soup!
I had a great organic tortilla soup base from Pacific and just threw that in a pot with a can of rinsed black beans, drained organic corn, and a package of Seeds of Change quinoa and brown rice with garlic(cooked first). I topped it with some shredded cheddar from the dairy and some delicious Central Market flax & quinoa tortilla chips. Delicious!!
To drink…a piña colada! Well, kind of! 1 cup of almond/coconut milk, 1/2 can of pineapple, a handful of spinach, and some ice makes a super yummy ‘piney greeney’ smoothie.
