One of my favorite meals in Texas was a giant potato topped with brisket and cheese. Or veggies and cheese. Basically anything and cheese. 😉
Since we don’t have any of that here in our small town in AZ, I have to be creative to recreate it. I found the giant potatoes at our local grocery store and a beef/chicken BBQ combo at Sam’s Club.
It’s pretty simple to throw the meat and potatoes in the oven for a yummy dinner.
Some nights, though, I can’t be home to put anything in the oven. Thank goodness for crockpots!!
Today Meg has a volleyball game at 5, the boys have football from 5:30 to 7:30…and we have a meeting at 6! So, I won’t be able to run home to make sure dinner is ready when we get home at 8!
So, I used this tip to cook potatoes in the crockpot & just made a foil dish to put the BBQ chicken in on top. Hopefully it will be done tonight when we get home!
